I have been on a bit of a soup kick lately. It is just such a great meal! And I like to take it for lunch during the week.
I made this soup this weekend. Well, I made a version of this soup. I made it according to the recipe a few weeks ago, and this time I branched out a bit and added some beef and chunks of sweet potatoes. Also, I swapped the regular lentils for french lentils. I think they have a different texture, but they taste pretty much the same to me.
Barley, Lentil, and Mushroom soup

not the prettiest dish, but very tasty, and easy!
