the muffins!

Okay, the muffins that I told you about briefly Friday morning turned out super yummy!  And pretty!  I just got all crazy busy and then left town for a couple of days I haven’t had a chance to tell you about them, but I said I would, and I know you were on the edge of your seat waiting to hear how it went, so now you know.

I’ve made this recipe several times and it has been good every time.  Sometimes I over mix the batter, so I was careful not to this time.  I measured and mixed and folded and then evenly portioned the batter among 12 muffin cups when it struck me that I hadn’t put any baking powder in.  Baking soda yes, baking powder no.  Look at the recipe, and yep, there was the baking powder right there in the list.  darn.  At this point I really didn’t want to try to add the baking powder, so I stuck them in the oven and hoped for the best.

24 minutes later. . . PERFECTION!  They turned out better than ever!  I was so happy!
